Savour the fusion of flavours in our lamb chop and sweet chilli Mash recipe. A simple culinary masterpiece!
6 Large Lamb Chops
3 Large sweet potatoes
2 tsp Dried Mint
25g Butter
2 tbsp Milk
1 ½ tbsp Sweet Chilli Sauce
Asparagus
Salt & Pepper
Carefully peel your sweet potatoes and chop into medium chunks. Then put them on to boil in a large pot of water for 20-25 mins.
Season your lamb chops with salt, pepper and your dried mint. Then drizzle over some olive oil and rub until seasoned evenly all over.
In a pan boil your asparagus in some salty water for 3-5 mins.
On a high heat, sear the chops until browned on both sides. (About 3-4 mins each side). Reduce the heat and cook for a further 2-3 mins making sure to keep rotating them. Once ready, leave them aside to rest for 3-4 mins.
Test your sweet potatoes with a knife to feel if they are soft in the middle. If ready, drain the water and then add your butter, milk and salt and pepper and mash until nice and creamy. Then add your sweet chillli sauce and mix through to create your sweet chilli mash.
Drain your asparagus and serve on a plate with a nice spoonful of your chilli mash and topped with your lovely and tender lamb chops. Now dig in!
